Ah the weekend! You know how much I love a lavish brekkie at the weekend! After 5 mornings of porridge it doesn’t quite cut it for the end of the week. I used an extremely handy madigascan vanilla grinder by Dr Oetker that I picked up but you can split a vanilla pod & use the seeds either. This was sweet & heavenly for just 6 propoints & only 1 on F&H. Here’s the skinny: 2 Slices Calorie Controlled Wholemeal Bread
65g Philadelphia Lightest Cream Cheese
1 Punnet Strawberries
A Tiny Dash of Skimmed Milk Start by chopping the strawberries & place in a bowl, sprinkle with 1 teaspoon of sweetener, stir it through & set aside for at least 5 minutes to marinade so the sweetener draws out some of the strawberry juice & they become nice & glossy. In a separate bowl mix the cream cheese, as much vanilla seeds as desired and a teaspoon of sweetener. In a shallow dish that the bread will fit into later combine 1 egg with the egg white of the second egg, some more vanilla seeds, a half a teaspoon of sweetener & a tiny dash of skimmed milk and mix well.
Spread the cream cheese mixture thickly over one slice of bread & layer the glossy strawberries on and top with the other slice of bread. Very carefully lower the sandwich into the egg mix (using a spatula will help). Leave for 2 minutes to soak up some of the mix. Preheat a non stick frying pan over a medium high heat and spray it with oil. Carefully turn the sandwich in the egg mix and leave for another 2 minutes to soak up the egg mix. Fry the sandwich for approximately 4 minutes a side or until cooked through. Sprinkle with sweetener, serve & enjoy!
I just adore pancakes, they are one of my favourite things in the world to eat. These light Crepes are lovely for Breakfast or make a delicious dessert. This recipe makes 4 Crepes in total and serves 2 people at 4 Smartpoints (3 Smartpoints on No Count) for 2 Crepes each (4pp for 2 Crepes per person or 3pp on F&H). Add Smartpoints for your toppings & extras as desired:
STRAWBERRY, RASPBERRY & CHOCOLATE VERSION
12g Whipped Cream 1 Smartpoint
10g Chocshot Chocolate Sauce 1 Smartpoint
Fresh Strawberries & Raspberries 0 Smartpoints
12g Whipped Cream 1 Smartpoint
Banana 0 Smartpoints
15g St. Dalfour Organic Caramel Sauce 3 Smartpoints
FOR THE CREPES:
12g Whipped Cream 1 Smartpoing
50g Self Raising Flour
100ml Skimmed Milk
A Pinch of Baking Powder (optional)
A Tiny Pinch of Salt Sift the Flour, Baking Powder & Salt into a bowl & make a well in the centre. Add the Egg & gradually add the Milk whisking as you go. Whisk until there are no lumps. Preheat your pan on a medium high heat & spray with spray oil. Fry each pancake individually for a few mins each side until golden brown. Roll pancakes up & decorate with toppings of your choice (Smartpoints above) & Enjoy!
I may or may not have just eaten this instead of a proper Dinner, totally disgraceful, I ought to be ashamed of myself but it’s so healthy & low in points I’m not even sorry! Sorry not sorry! The entire dessert pizza comes in at 8pp or just 4pp on F&H if you can even believe it. It serves 2 happy campers so 4pp per person or 2pp on F&H happy days! This one is ultra delicious for sure. You can follow the recipe if you’re inclined to eat pizza for breakfast, dinner & dessert like me! 1 Weightwatchers Tortilla Wrap
50g Lightest Philadelphia Cream Cheese
50g 0% Fat Greek Yogurt
1 tsp Sweetener
2 drops of Vanilla extract
15g of Chocolate Spread
A Couple of Fresh Strawberries, Raspberries & Mango cubed
15g Mini Marshmallows Fry the wrap in a pan sprayed with sprayoil over a medium heat for a couple of minutes each side until browning, this crisps up the wrap to hold the toppings without being too soft. Allow to cool completely. Meanwhile mix the cream cheese, yogurt, sweetener, chocolate spread & vanilla well in a bowl & refrigerate for a while to cool. Spread the Cheesecake Chocolate mix generously over the wrap base & top with the fruit & marshmallows. Slice & enjoy!
Get your mouth around that one! 5pp on both plans for this Whopper of a Dessert! Made for sharing if you split it (excuse the pun!) at 2.5pp I’d round the points up to 3pp. Yummy yummy yummy I got love in my tummy! 4 Well Ripe Bananas (the riper the sweeter)
1 Heaped Tsp Chocolate Spread
10g Chocolate Chips
10g Glacé Cherries
20g Light Aerosol Cream
1 Tsp Choc Shot Slice 3 of the bananas into evenly sized pieces & freeze ina tupperware tub overnight. Place the frozen banana slices into your food processor (you’ll need to do this in 3 batches or it will be too overcrowded in the food processor to work) pulse the bananas, at first they will go crumbley, then kinda gooey, scrape down the sides of the food processor a few times at this stage, keep going it takes longer than you think, you can keep the processer on instead of pulsing at this stage & eventually (you need to be patient it takes a good few minutes) the bananas will miraculously turn into creamy soft serve icecream consistency. Add flavourings here: keep 1 plain, add 2 fresh strawberries to the next batch & a heaped tsp chocolate spread to the last batch. Keep blending each for a few more minutes to aerate the icecream. Scoop into small tupperware tubs & refreeze for a few hours until it solidifies more. You could eat it at this point but it’s quite soft icecream. When ready scoop each of the icecream flavours onto your dish & garnish with another split banana, strawberries, chocolate chips, 1 tsp of choc shot, the cream & cherries & enjoy the well deserved fruits of your labour! Premade meringue nests are the oldest trick in the book to curb a sweet tooth while watching your figure. Sweet & Light they are a perfect lowfat easy summer dessert option with fruit & squirty cream for as low as 2pps! I gave this 3pp as the meringue nest is slightly larger than usual. This is simply 1 Meringue Nest, 20g of Light Whipped Squirty Cream & Freshly Chopped Strawberries & Mango. Summer in a bowl! Hope you’re all enjoying the fabulous sunshine today!
So it’s post weigh in & sweetie time! I don’t want to undo any of my hard work so how about this Sumptuously Cheeky Cheaty Strawberry & Malteser Cheesecake! I made this for 2 people and it comes in at approx 6pps per serving. A lovely decadent well deserved treat. I hope you enjoy!
- 2 Fun Size Bags of Maltesers
- 100g Extra Light Cream Cheese
- 100g 0% Fat Greek Yoghurt
- 2 Tbsps Sweetener
- Few drops Vanilla Extract
- 2 Tbsp good quality Strawberry Jam/Conserve
Chop Maltesers & layer into 2 glasses. Mix Cream Cheese, Yoghurt, Sweetener and Vanilla extract in a bowl until smooth & spoon evenly over each of the Malteser bases. Refrigerate for at least an hour until chilled. Chop Strawberries. Stir the Jam around in a bowl until it loosens & toss Strawberries in until coated. Spoon on top of cheesecakes and chill until ready to eat.
