Simple Savoury Mince

I had my first Wedding Dress fitting today and the bloody thing fits! Can you believe it! I can’t cos it was tight a week ago and the two zip ends wouldn’t meet when I tried it on in Mams house but a whole week of

being right on track nutritionally plus heading to the gym and I could have worn that dress there and then, I could have floated out of the seamstress shop. A few more lbs will see my tummy slightly flatter as it’s a very fitted style. So I’m losing a little more and them maintaining until September when I walk down that aisle. I fancied Savoury Mince with spuds tonight for something a little different. It’s so healthy and easy to make no wonder it’s such a firm family favourite.

500g lean steak mince 4% fat
1 pack Turkey Lardons
1 tin Plum Tomatoes
1 Clive Garlic crushed
1 Onion diced
1 Carrot diced
A Small Handful frozen peas
1 Tbsp Paprika
1 Chicken Stock cube
1 Tbsp Bisto Gravy Granules
Salt & Black Pepper

Heat a medium sized pan and spray with oil. Fry the diced onion and carrot for 5 minutes until soft. Add the Turkey Lardons and continue to cook until they are done. Add the crushed garlic for 30 seconds. Add the mince and fry until browned. Sprinkle the Paprika over the mince mixture and season with salt and pepper, mix through. Put the tinned tomatoes in, refill the empty tomato tin with water and add that also. Throw in the stock cube and simmer over a medium heat for 45 minutes stirring occasionally. 10 minutes before the end add in the frozen peas. 5 minutes before it’s cooked add in the Gravy granules stirring continually to thicken. Some fresh chopped parsley or herbs if you have some will add a nice touch just before serving. Serve with some baby potatoes or mash and enjoy. Serves 4 people.
