This is beautifully quick & easy to throw together, it literally takes minutes making it a great contender for a mid week dinner. I sometimes eat different meals from my family due to my fitness and protein consumption goals and I made this just for one, you can double it up if you need to serve more people. I used what I had available to me which is realistic for us all so if you’re steak is slightly larger, smaller or a different cut of meat just adjust your macros or Smartpoints accordingly. I always cut my meat against the grain before cooking it and it makes for a much more tender softer piece of meat, trust me it makes all the difference. To cut against the grain simply look for the grain (natural lines across your steak) and cut it in strips going in the opposite direction. Macros 589Cal P43 C66 F17 Smartpoints 13.
155g Lean Sirloin Steak (all visible fat removed) cut into strips against the grain
1 Small Yellow & Red Pepper Sliced
2/3 Spring Onions Diced
50g (1 nest) Dried Wholewheat Egg Noodles
¼ of a Cup of Reduced Salt Soy Sauce
¼ of a Cup of Water
1 Tbsp Rice Wine Vinegar
1 Tbsp Cornflour
¼ Tsp Chinese Five Spice
1 Garlic Clove Crushed
A Sprinkle of Dried Chilli Flakes
In a bowl mix together the soy, water, rice wine vinegar, Chinese five spice, crushed garlic, and chilli flakes. Season with black pepper & stir through the cornflour until dissolved in the marinade & no lumps remain. Add the steak strips to the mix ensuring you cover all the meat with the liquid and allow to marinade for at least 15 minutes. Prepare your noodles as per packet instructions, they usually only take about 4 minutes in boiling water so prepare them when you’re about 4 minutes out from finishing cooking the steak sauce. Spray a large pan with oil and sautée the strips of yellow & red pepper until softening, approximately 5 minutes. Add in the spring onion for one or two more minutes to soften, remove and place on a plate, cover & keep warm. Remove the steak from the marinade with a slotted spoon so the marinade stays in the bowl & fry the steak pieces in the pan until cooked to your liking (about 2 minutes for medium). Remove cooked steak pieces onto the same plate as the mixed peppers & spring onions. To make the sauce pour the marinade into the pan and stir continuously until thickened, this will only take a minute and you may want to turn the heat down to low. Add the Peppers, spring onion & steak pieces back into the sauce. Drain the noodles and add to the pan. Stir through thoroughly until everything is coated in the sauce, serve & enjoy.
