Skinny Southern Fried Style Crispy Chicken Goujons


Succulent juicy chicken breast encased in a spicy crispy crunchy crumb just ripe for dunking into your favourite dipping sauce. Heavenly morsels of weekend goodness that deliver that take away feeling without any of the guilt, perfection! Serves 4 hungry people at 6 Smartpoints a serving (4 Smartpoints on the No Count Plan). These are ridiculously easy & quick to make and can be frozen raw to cook another time, how handy is that! Here’s the skinny: 
500g chicken fillet

1 egg

125g cornflakes

1/2 tsp paprika

1/2 tsp dried oregano

1/2 tsp dried thyme

1/4 tsp garlic salt

1/4 tsp onion salt

Salt & black pepper


Preheat your oven to 200°C. Cut the chicken fillets into goujon sized pieces. Crack the egg into a bowl and add a splash of water, beat well with a fork. Place the cornflakes into a large food bag and bash with a rolling pin until fine crumbs are formed (alternatively you can blitz them in your food processor to achieve the same result). Add all the seasonings to the cornflake crumbs and mix thoroughly. Line a baking tray with tinfoil and spray lightly with spray oil. Dip the chicken pieces into the egg and allow any excess egg mix to drip off. Dunk them into the seasoned cornflake mix and coat each one well, laying each piece on the baking tray while leaving a small space between each one. Bake in the preheated oven for 25 to 30 minutes until fully cooked through and enjoy!
