Light & Fluffy Chocolate & Baked Banana Oaty Pancakes


These beautiful pancakes are made using oats for an alternative to the usual flour based recipes. I added a touch of chocolate flavour that compliments the banana really well.

50g Porridge Oats

1 Large Egg

75 mls Skimmed Milk

1 & ½ tsps Sweetener

1 tsp Hot Chocolate Powder

Spray Oil

1 Banana

1 Tbsp Sweet Freedom Pancake Syrup

 

Makes 4 Pancakes

With Syrup: 2 pancakes 7 Smartpoints (or 1 Smartpoint on No Count)

Without Syrup: 2 pancakes 5 Smartpoints (or Free on No Count)

 Separate the egg & whisk the egg white in a clean bowl until it forms soft peaks. Place the oats, egg yolk, milk, sweetener & hot chocolate in a food processor and blend until smooth. Fold the oat mixture into your egg whites with a metal spoon gently taking care not to knock too much air out of the whipped whites. Dollop the mixture into a preheated pan sprayed with oil and fry for 3 to 4 minutes each side until brown. Meanwhile place the sliced banana on a lightly sprayed baking tray spray with oil & grill until golden brown. Serve your hot pancakes with a pile of baked banana & drizzled with the syrup, Enjoy!
