These Pancakes are Fluffy & Light but still sturdier and a bit more substantial than the usual thin crepe pancakes. These are so filling & perfect for Breakfast.
1 cup flour,
2 tbsp sugar,
1 tsp baking powder,
1/2 tsp baking soda,
1/4 tsp salt
250 ml Buttermilk
1 tsp Vegetable Oil
1 Egg
Mix all the dry ingredients together in a bowl. Make a well in the centre & add the buttermilk, vegetable oil & egg, whisk all the ingredients together gradually until they form a smooth batter. Heat a pan & spray with oil, fry each pancake for several minutes until light, fluffy & brown. Keep warm. Serve the warm pancakes with Fresh Summer Fruits & Low Fat Yogurt & enjoy! This recipe makes 9 pancakes. To freeze place baking paper between pancakes & wrap in foil. These worked out at 3 Smartpoints per pancake or 6 Smartpoints for 2 Pancakes ( 3 Propoints for 1 or 5 Propoints for 2 pancakes)
