1 clove garlic minced
1 head broccoli cut into florets
1 head cauliflower cut into florets
1 chicken or veg stock cube dissolved in 1 litre boiled water
Fresh nutmeg grated
Salt & black pepper
Spray a large pot with sprayoil & soften the chopped onion for about 5 minutes. Add the garlic & continue to cook 30 seconds. Add all the veg & stir for a few minutes. Add the stock, thyme & nutmeg and season well with salt & pepper. Cover & cook for approximately 15 to 20 minutes until veg is just soft. Blitz with a hand blender adding more water depending on the consistency and thickness desired. Serve & enjoy. Free on all plans.
