Delicious Skinny Banana & Milk Chocolate Baked Oat Muffins


Nothing beats the gorgeous smell of baking through the kitchen of a Saturday morning. Hot & fresh out of the oven Delicious Skinny Banana & Milk Chocolate Baked Oat Muffins. A delicious weekend treat at just 3 propoints a muffin (or 1pp on Filling & Healthy). This makes 6 breakfast muffins (20pp per recipe or 4pp per recipe F&H). I hope you have a Fabulous Saturday!


130g Porridge Oats

2 Bananas

30g Dr Oetker Milk Chocolate Chips

1 Tsp Baking Powder

A Pinch of Salt

3 or 4 Tbsps Sweetener (depending on your taste)

250ml Skimmed Milk

1 Egg

1 Tsp Vanilla Extract  

Preheater oven to 180°C fan. Combine all the dry ingredients in a medium bowl. Slice the bananas (reserve 6 full slices to top the muffins) and half the remaining slices and add them and most of the chocolate chips to the dry ingredients (reserve some chips for the top also). In a separate bowl combine the milk egg and vanilla and whisk well. Add the wet ingredients into the dry ingredients and mix well. Spray a muffin tray well with spray oil. Spoon the mixture equally into six of the muffin tins, talk each muffin with a slice of banana and several chocolate chips and bake for 30 to 35 minutes until cooked through. Allow to cool for 10 minutes and loosen each muffin by going around the edge with a sharp knife before lifting from the tin. Serve alone or with some low-fat yoghurt for a gorgeous breakfast treat.
